At Gondwana Wines, we store our white and red wines in wine cellars that are temperature controlled. This ensures that the wine ages slowly and does not form sediment for a long time. We also maintain optimal humidity to keep our wines in good condition.
We have vineyards spread across the various regions of South Australia, Victoria and New South Wales. We are also planning to expand to more areas of Australia soon, especially in the Western Australia region.
Our main philosophy is to infuse the traditional culture of The First Nations with the modern technology of the newer inhabitants. We want to create a wine that is a culture and represents the people of Australia.
We use sustainable methods to grow our grapes, and our farmers also use eco-friendly policies in a non-intervening manner. Our focus is on growing high-quality grapes naturally that will create good wine.
Ideally, wine bottles should be stacked at an angle in the crates or barrels so that the cork does not soften over time and go inside the bottle. When the bottle is at an angle, the cork will get a little moisture but will also stay intact for a long time.
If the cork goes inside the wine bottle, we take it out while decanting the wine. We use a strainer and a glass vessel and pour the wine into the vessel. The cork will stay inside the bottle while the wine is separate. If the cork breaks down, the bits will come out in the strainer.
Decanting is essential to separate the sediments from the wine. Over time the wines age, and sediments form at the bottom and change the taste of the wine. That is why it is necessary to decant the wine to keep the flavour of the wines intact.
We have now diversified our selection of grapes and have gone beyond French varieties. We pick grapes from Portugal, Spain, Greece and Italy that suit the Australian climate and soil more to produce good quality wine.

Wine is kept in tinted bottles and wooden crates so that it is not exposed to direct sunlight. Light can transform the taste and flavour of wine as it reacts with the phenolic compounds in red and white wine to produce wine faults. This can even create a foul-smelling aroma and age the wine more quickly.
